Southern-Style Gluten-Free Bread Pudding

Use your favorite gluten-free bread to make this rich, Southern-style gluten-free bread pudding recipe. You can substitute rum or brandy for the bourbon in the sauce recipe if you like.

Ingredients

For the Bread Pudding:

  • 1/3 cup raisins or currants

  • 2 tablespoons bourbon, brandy, or rum

  • 2 medium apples, peeled, cored, and sliced 1/4-inch thick

  • 1/4 cup maple syrup

  • 2 teaspoons cinnamon, divided

  • 6 slices thick gluten-free bread, cut into 1/2-inch cubes

  • 2 cups heavy cream, or canned coconut milk

  • 1/2 cup sugar

  • 3 large eggs, lightly beaten

  • 1 teaspoon pure vanilla extract

  • 2 tablespoons butter, melted

For the Bourbon Sauce:

  • 4 tablespoons (2-ounces) unsalted butter

  • 1/2 cup firmly packed brown sugar

  • 1/2 cup heavy cream, or canned coconut milk

  • 1 pinch salt

  • 2 tablespoons bourbon, or brandy

  • 1/4 teaspoon pure vanilla extract

Steps to Make It

Make the Bread Pudding

  1. Gather the ingredients.

  2. Preheat oven to 325 F/163 C. Generously butter a 9-inch by 9-inch baking dish.

  3. Combine raisins and 2 tablespoons bourbon or brandy in a small bowl. Soak for 20 minutes. Drain and reserve liquor.

  4. Sauté sliced apples with maple syrup and 1/2 teaspoon cinnamon over medium-low heat until translucent, but not mushy, about 8 minutes. Set aside.

  5. Place bread cubes in a large mixing bowl.

  6. Heat cream (or coconut milk) and sugar over medium-high heat until sugar dissolves.

  7. Remove from heat. Pour hot cream (or coconut milk) and sugar mixture over bread cubes. Cool.

  8. Lightly beat eggs in a small bowl. Add 1 1/2 teaspoons cinnamon, vanilla, and liquor reserved from soaking raisins. Pour over bread cube mixture and fold in.

  9. Add melted butter and prepared apples and fold in.

  10. Let mixture sit for about 10 minutes.

  11. Pour bread pudding mixture into buttered baking dish.

  12. Bake for 45 minutes or until the pudding is golden brown and set.

Make Bourbon Sauce:

  1. Gather the ingredients.

  2. Melt butter in a heavy saucepan over medium-high heat.

  3. Add sugar, cream (or coconut milk), and salt.

  4. Bring to a boil and immediately remove from heat.

  5. Stir in bourbon and vanilla.

Tips
