Greek Salad with Mediterranean Mint Vinaigrette

This healthy recipe for Greek Salad is delicious alone as a healthy low calorie lunch, or serve this intensely flavorful salad as a side with grilled fish or seafood.

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • 1 washed and dry head of Romaine lettuce
  • 1 washed and dry head of Bibb lettuce
  • 3 Roma tomatoes, cut into wedges
  • 1 bell pepper, cut into thin rings
  • 1 thinly sliced red onion
  • 1 thinly sliced large cucumber
  • 8-10 Greek pepperoncini pickled peppers (find in the pickle section of most groceries)
  • 1 jar of unpitted Greek olives
  • 1/4 cup minced Italian parsley
  • 8 ounces crumbled Feta cheese
  • 1 recipe for Mediterranean Mint Vinaigrette -(recipe below)

Preparation:

Tear Romaine and Bibb lettuce into small, bite-sized pieces and arrange on a large platter. Layer all vegetables evenly over the lettuce. Add crumbled Feta, black sliced olives and unpitted olives. Sprinkle with minced parsley. Serve with Mediterranean Mint Vinaigrette or your favorite gluten-free dressing.

Serves 8 to 12
