Guide Review - Review of Gluten-Free Holiday Peppermint Thins Recipe from Land O'Lakes
The taste and texture of this recipe for gluten-free holiday peppermint thin cookies are reminiscent of chocolate wafer cookies, simple and satisfying - only this recipe is flavored with peppermint extract and frosted and decorated for the holidays.
This recipe uses a simple gluten-free all purpose flour blend made of white rice flour, potato starch and tapioca. Cocoa supplies lots of chocolate flavor and the cookies roll out nicely and are easy to handle. You can make the dough ahead of time and keep refrigerated until you're ready to make them.
The recipe is iced with melted almond bark candy coating. Almond bark products may contain hydrogenated oils (trans fats). Therefore, to avoid this unhealthy fat, you may decide to substitute melted good quality white chocolate chips for the almond bark icing called for in this recipe. See recipe below.

White Chocolate Icing Recipe:
- 1 12-ounce bag of good quality white chocolate chips
- 1 1/2 teaspoons vegetable shortening
Place chocolate and shortening in a microwave safe bowl. Heat on high for about 20 seconds, stir and heat for another 20 seconds. Stir again. Icing is ready when the mixture is smooth and creamy. Carefully dip one side of cooled cookies in mixture and hold cookie over bowl to allow excess to drip back into the bowl. Set dipped cookies on waxed paper and sprinkle with your favorite gluten-free decorations, chopped nuts or crushed peppermint candy.
