Gluten-free chocolate walnut torte is based on a classic Mediterranean recipe for "Chocolate-Walnut Torta Caprese" which appears in the cook booklet "Culinary Journey to the Mediterranean."
This cake is easy to make and isn't overly sweet so you might want to serve wedges with a small dollop of whipped cream or ice cream. Also, it's delicious served with a cup of espresso.

- 8 ounces semi-sweet chocolate chips, melt and cool
- 1/2 cup (1 stick) softened unsalted butter
- 3/4 cup cane sugar (divide into 1/2 cup plus 1/4 cup reserved to use when whipping egg whites)
- 7 large eggs, separated
- 2 tablespoons instant coffee powder
- 1 1/2 cups ground walnuts (about 6 ounces ground in a food processor)
- 1/3 cup gluten-free sweet rice flour
- 1 tablespoon gluten-free powdered sugar for garnish
Preheat oven to 350° F / 176° C
Lightly grease a 9-inch spring form cake pan
Melt chocolate chips and set aside to cool. Beat softened butter with 1/2 cup cane sugar using an electric mixer. Pour in melted chocolate and beat to blend. Beat in egg yolks, one at a time. Add instant coffee powder and beat to blend. Stir gluten-free flour into ground walnuts and add to butter mixture. Stir to thoroughly combine.
In a separate bowl with clean beaters, whip egg whites until foamy. Gradually add 1/4 cup cane sugar and continue to whip until egg whites form peaks. Add about 1 cup of the egg whites to the cake batter and stir. Use a large spatula to fold in remaining egg white mixture.
Pour the cake batter into prepared spring form pan. Smooth top with spatula. Bake in preheated oven for about 40 minutes or until a toothpick inserted in center comes out clean.
Cool the cake in the spring form pan for about 15 minutes before removing it. Put 1 tablespoon gluten-free powdered sugar in a small mesh sieve and sprinkle over top of cake.
