To make Gluten-Free Rosemary Walnut Bread you will need a heavy, lidded 2-quart pan or oven-proof bowl. Pyrex baking dishes work great. Lidded bakeware is key to the great crust and texture of this bread.

A heavy pan creates a nice crust and the lid keeps heat and steam in, helping to bake the bread faster and more evenly. I find that cooking gluten-free bread in lidded pans or bowls prevents loaves from collapsing in the middle. If you have had this happen when baking gluten-free breads you know how disappointing it is when this happens!
