Gluten Free Cashew Butter Cookie

Gluten Free Cashew Butter Cookies are an adaptation of a recipe by Donna Washburn and Heather Butt featured in their cookbook Complete Gluten-Free Cookbook. This gluten free cookie recipe is free of peanuts and corn and can be adapted to a dairy free recipe by replacing the butter with coconut oil, or your favorite dairy free fat.

Ingredients:
  • 1 1/4 cups amaranth flour
  • 1/4 cup arrowroot flour
  • 1/2 teaspoon guar gum
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup packed brown sugar
  • 1/2 cup smooth cashew butter
  • 1/4 cup butter, room temperature
  • 1 teaspoon vanilla
  • 24 cashew halves (optional)
Preparation:
Preheat oven to 350°

Line baking sheets with parchment paper or lightly butter

  1. Place all dry ingredients in a mixing bowl and whisk to thoroughly blend.
  2. Place egg and sugar in a large mixing bowl. Use an electric mixer to cream egg and sugar until light and fluffy.
  3. Add cashew butter and vanilla to egg-sugar mixture and beat just until blended.
  4. Slowly add dry ingredients and beat on low, just until all ingredients are combined.
  5. Use a small ice cream scoop (size ) or a teaspoon to drop cookie dough on prepared baking sheet.
  6. Press the coookie dough with a fork for a traditional peanut butter cookie look. Add cashew halves in center of cookies (optional).
  7. Bake in preheated oven for 12-15 minutes or until cookies are done.
  8. Cool on a wire rack.

    Yield- About 24 cookies

    Tips-
    You can substitute peanut butter for the cashew butter and cornstarch or potato starch for arrowroot starch with good results.
