5 Easy, Healthy and Packable Gluten-Free Snack Recipes


Traveling on a gluten-free diet is challenging to say the least. The following gluten-free travel snack recipes are easy to make and don't take up much room in a travel bag or cooler. I have taken all of these healthy gluten-free snack foods with me while traveling- and was so glad I did!

1. Gluten-Free Amaretti Cookies

Amaretti cookies are crunchy small Italian cookies with a lovely almond flavor. They are an ideal gluten-free cookie because the recipe is free of flour- and they are very sturdy!

2. Gluten-Free Cheese Crackers

Lots of cheddar cheese, a pinch of cayenne, healthy amaranth flour and almond meal meld into a crisp, cheesy gluten-free snack cracker. Spread with nut butter or add a slice of cheese for a nutritious snack or light lunch. These crackers are not only delicious, they're sturdy- you won't end up with a pile of crumbs!

Healthy and easy to make, this gluten-free almond biscotti recipe is laden with toasted almonds, amaranth flour and almond meal. Biscotti is a sturdy packable snack, perfect for gluten-free travel or brown bagging.

I love to pack a pint or two of this healthy fresh salsa when I travel. It's loaded with fresh grape tomatoes, lime juice, peppers, cilantro and high protein and fiber black beans. Add a bag of gluten-free corn chips and you have a great, nutritious snack-on-the-go.
