Deviled Ghoul Eggs - Recipe for Gluten-Free Deviled Eggs

These high protein, dressed up deviled eggs will entice your little gluten-free witches and vampires to eat healthy foods on Halloweens. More real food, less junk food on Halloween is a good thing!
Prep Time: 30 minutes
Ingredients:
  • 12 hard-boiled eggs
  • 1/3 cup gluten free mayonnaise
  • 2 teaspoons prepared gluten free mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and fresh ground pepper to taste
  • 24 large black olives
  • 1 ounce white cheddar cheese to stuff in black olives
  • 3 cucumber slices
  • 1 peeled carrot
  • 1/2 teaspoon smoked paprika
Preparation:
  1. Cut the hard-boiled eggs in half and scoop yolks into a bowl.
  2. Use a fork to finely mash the yolks.
  3. Add mayonnnaise, prepared mustard, vinegar, sugar, salt and pepper.
  4. Use a spatula to blend all ingredients into a smooth mixture.
  5. Use a melon ball scoop to place a rounded ball of egg filling on each egg white.
  6. Cut cheese in small sticks to fit in each olive. Stuff cheese in olives and cut olives in half. These are the ghoul eyes.
  7. Use a vegetable peeler to slice long, thin carrot strips. These are used to make the ghoul mouths.
  8. Cut cucumber slices in small wedges. These are used to make the ghoul noses.
  9. Lightly sprinkle with smoked paprika.
  10. Refrigerate until ready to serve.
