Garbanzo beans. Chickpeas. Ceci beans. Desi, bambai and kabuli varieties. Gram flour. Besan flour. All of these terms describe variations of the fabulous fabaceae family of legumes. And a bean with so many names illustrates just how broad the cultural appreciation is for this naturally gluten-free, nutritious legume.

You're likely familiar with the deliciously creamy appetizer / snack known as hummus.  You may even use gluten-free garbanzo flour in your baking. Beans are an inexpensive high fiber food and can be a nutritious addition to gluten-free diets, especially when you learn how to soak and cook garbanzo beans to improve their digestibility.
