Gluten-Free New Year's Day Prosperity Bean Soup

Gluten-Free Navy Bean SoupAccording to southern folklore, eating a bowl of black-eyed pea or navy bean soup with greens and ham on New Year's Day brings prosperity in the coming year.

Growing up in the south, I remember this tradition very well, mainly because my father prepared our "Prosperity Soup" and it was so delicious. And he occasionally tossed a penny in the soup pot and warned us not to swallow it. Please note - my recipe doesn't call for a penny!

Superstitions aside, bean soup is naturally gluten-free as long as you use gluten-free stock, seasonings and a fresh ham bone or meat in your recipe. Make a pot of gluten-free navy been soup today or tomorrow, let the flavors meld and welcome in 2014 with this deliciously comforting bean soup. May you and yours enjoy a "prosperous" New Year!
