Use a mini-muffin pan and a 1 tablespoon ice cream / cookie scoop to create this easy, baked, pop-in-your-mouth delicious alternative to fried donuts.

However, eaters beware, these pumpkin-rich treats are anything but fat-free or low-sugar!
