I'm always on the lookout for gluten-free recipes that use less gluten-free flours, starches and sugar than the average recipe - especially cookie recipes. Crowding our diets with refined carbohydrates, gluten-free or not, just isn't very healthy in the long run.
This recipe for gluten-free chocolate walnut truffle cookies was adapted to gluten-free diets from a recipe which I found on the Ghirardelli Chocolate website - "Chocolate Truffle Cookies with Sea Salt." After making a few modifications to the original Ghirardelli recipe, the end result was a delicious brownie-like cookie. I stored my cookies in the refrigerator which I think made them extra chewy delicious.
The recipe makes two dozen gluten-free cookies using only 6 tablespoons of all purpose gluten-free flour, 1/2 cup of cane sugar and 2 tablespoons of butter. Compare that to your average chocolate chip cookie recipe! And they make a batch for your chocolate-loving Valentine!
