I have always loved that most maligned of Christmas cakes, the fruitcake. Dense buttery batter, full of fruits and nuts, soaked in brandy or rum for days until finally served. What's not to like?!
This recipe skips the dyed candied fruits which have always reminded me more of Christmas lights than food. For the best flavor on Christmas, bake your gluten-free natural fruitcake this weekend!

This recipe looks incredible – got to be making it this weekend! I LOVE fruitcake
My daughter thinks it’s strange, but it’s comfort food for me.
My fruitcake recipe is way more complicated than yours, so I’m reluctant to post it. BUT I did create a quick, easy substitute – gluten free fruit bread, which I make in my bread machine. It makes my mornings cheerier! Here’s the recipe…
