Rosettes are small Scandinavian deep-fried pastries made using a "rosette iron" - a unique gadget that comes with a variety of interchangeable metal decorative shapes. Rosette irons are usually available at specialty cookware shops, Scandinavian shops and of course, online.
Rosette batter is a lot like pancake batter. It's not overly sweet and gluten-free rosette batter is very easy to prepare by simply substituting a basic gluten-free all purpose flour for the wheat flour used in traditional rosette recipes. I didn't add any gum because I wanted my rosettes to be crispy, and they were.
