OK! Gluten-free pumpkin doughnut "holes" aren't perfectly round. And they aren't fried either. What they are, are perfectly delicious treats for the fall season that gluten-eaters appear to enjoy just as much as I do.
Use a mini-muffin pan and a 1 tablespoon ice cream / cookie scoop to create this easy, baked, pop-in-your-mouth delicious alternative to fried donuts. However, these pumpkin-rich treats are anything but fat-free or low-sugar. The warm mini-muffins are dipped in melted butter and rolled in spiced sugar. Yum.
