The great thing about baking gluten-free breads in mini loaf pans is that the batter rises so nicely and doesn't collapse as it sometimes does when using larger sized loaf pans. And there's something so warm and cuddly about a mini loaf of bread!
This recipe for rice free gluten-free yeast bread is moist and doesn't have the gritty texture characteristic of some rice flour bread recipes. I did use several ingredients that you may need to find at a health food store or even online but I found the results worth the additions.
