Easy Gluten and Dairy-Free Strawberry Shortcake
This weekend I found myself with a surplus of strawberries. By surplus I mean about 3 pints. My strawberries were at the very peak of summer-freshness, but in a day or or two I knew they would be at the "use them or lose them" stage- destined for the freezer. Their sweet fragrance was intoxicating!
Since I didn't have a gluten-free cake mix on hand and the nearest store that carries GF mixes is a 60 mile roundtrip commitment, I decided to make strawberry shortcake, using a basic yellow gluten-free cake recipe, baked in a cupcake pan. The recipe is delicious and saved 3 pints of fragrant and juicy strawberries from the freezer.
This recipe is GFCF. It's gluten and dairy-free so it's appropriate for those on the GFCF diet but substitute butter, milk and whipping cream for non-dairy ingredients if you aren't allergic or intolerant to dairy foods.
